Pike’s Peak Potatoes (Special Occasion)

1 1/2 pounds new potatoes, unpeeled and sliced scallop style

3/4 cup heavy cream

1/2 cup chicken broth

1 cup shredded swiss cheese

Garnish with diced green onion after cooking (optional)

Makes six servings.

Place sliced potatoes in greased 9x9 baking dish. Sprinkle with salt and pepper to taste. Mix cream with chicken broth and pour over potatoes. Cover and bake at 350 degrees for 30 minutes. Uncover and bake for another 30 minutes. Sprinkle with cheese and retrun to oven until cheese is melted. (Thank you Jeannine Wyatt for contributing this easy and yummy recipe!
